  • add   2 slices whole-wheat bread
  • add   cold poached salmon
  • add   6 slices very thin English cucumbers
  • add   1/2 cup chopped watercress
  • add   1 tablespoon low-fat mayonnaise
  • add   1/4 cup alfalfa sprouts
  • add   carrots
  • add   celery
  • add   salt & pepper

Instructions

  1. Place salmon on first slice of bread.
  2. top with cucumber& alphalfa sprouts.
  3. Combine watercress with mayo and add to sandwich; season to taste with salt& pepper.
  4. Top with second slice of bread and place in plastic wrap.
  5. Take celery& carrot sticks in a separate container for munching at lunch time.
